Presentation of the exploitation

The farm of Berthou or Gaec Giraud is located at Tarare in country beaujolais wine

This exploitaton family of a surface of 86 ha and a herd of 55 cows laitiéres comprises 3 associated:

- Lucien Giraud deals with the cows and carries out a daily round of door-to-door selling with WINNOWING MACHINE. -
- Bernadette Giraud deals with the manufacture of cheeses. She is also present on the market of ST FOY LYON FRIDAY afternoon and SATURDAYS morning at the market of WINNOWING MACHINE.
- Fabien Giraud installed into 1996 deals of the cows, work of culture and repairs. It is present on the market of the CARNOT place WEDNESDAY afternoon.

The farm of Rethaudiere

belongs to the family since several generations.

Devoted to the breeding primarily, the productions various and were varied (milch cows, sheep, pigs, poultries).

The arrival of fatty ducks is rather recent, it goes back to 1994. Currently only three productions exist: milch cows, fatty ducks, and poultries.

My duck breeding

At 4 days, the small ducks arrive directly of the acouvor. He are put at the heat on straw with radiants, water and food at will. For one month, they grow with the shelter.
According to time (and the temperature) I release them on a course pasture. It will continue this mode for approximately 3 months water and food farm (cereal and oil cake) at will. To 18-20 weeks their weights must reach 4KG.

Then come the period from the cramming.

The cramming has a goal: to make take the maximum of fat to duck in a minimum of time. For that the ducks eat a rich food: but. They receive two meals per days during 3 weeks, using gaveuse. Water at will. But is slightly cooked, to be better digested. They are closed in boxes of 3 square meters by batches of 25.

At the end of three weeks of cramming, the ducks weigh approximately 6 KG, for a weight of 4KG at the entry of the cramming. The liver, weighs to him between 500 and 600 grams. At this time, it is necessary to transform these ducks into tasty products.
